Everybody adores a decent rich cheddar sauce, amiright? This veggie lover cheddar sauce tastes scrumptious on everything! Make yourself a group of vegetarian macintosh and cheddar or slather this sauce on a container of nachos. The choices are interminable!

On the off chance that there was one thing I could eat each night it would be a major bowl of rich macintosh and cheddar. It has consistently been one of my preferred things to eat. It is one nostalgic dish for me.

Some time ago Velveeta was the go-to boxed macintosh and cheddar. My center school self would scarf down a container with my sibling in the blink of an eye. Kraft macintosh and cheddar was constantly served at my grandmother and grandpa's home for each occasion. It was generally quite a lot more velvety then when I would make it. I later learned it is on the grounds that my grandpa would include an additional stick of margarine and destroyed cheddar (talk about jam-pressed).

When I moved on from secondary school I was into each custom made macintosh and cheddar formula I could get my hands on. I would include crunchies top, prepare it, pot it, and everything in the middle. The main thing I truly thought about was that it was velvety!

INGREDIENTS

  • 1 cup soaked raw cashews*
  • 1 cup sweet potato puree
  • 1/4 cup nutritional yeast
  • 1/2 teaspoon salt
  • 1/2 cup vegetable broth** (or water)
  • 1 teaspoon apple cider vinegar

INSTRUCTIONS

  1. Begin by submerging 1 cup of raw cashews in water. Let soak overnight or for at least 12 hours.
  2. Once your cashews have softened, strain and rise and place into a high-speed blender.
  3. Then, add sweet potato puree, nutritional yeast, salt, vegetable broth, and apple cider vinegar.
  4. Blend on high until everything is pureed together and smooth. You may need to stop and scrape the sides. If your cheese is too thick, add a little bit more vegetable broth by the 1 tablespoon.
  5. Enjoy over pasta, on broccoli, as a dip, on nachos, etc!
