Ritz treats are another of our preferred treats during the Christmas season, and I've made them for quite a long time. My family can't go a Christmas without making them, and they even make extraordinary Valentine's Day and Easter confections.

Ingredients :

  • 3 sleeves Ritz Crackers
  • 1 cup creamy peanut butter
  • 15-20 ounces dark chocolate melting wafers

Instructions :

  1. Put a sheet of wax paper on your cookie sheet.
  2. Use your knife to spread peanut butter between two Ritz Crackers, sandwiching the crackers together.
  3. Set all your peanut butter cracker sandwiches on the wax paper covered cookie sheet, in preparation for dipping.
  4. Melt the chocolate according to package directions.* I like to go the easy route, using my large glass measuring cup and melting the wafers in the microwave.*
  5. Once the chocolate is melted, dip each cracker sandwich in the melted chocolate, using the forks or tongs. Shake any excess chocolate off before placing back on the wax paper to dry.
  6. When all your crackers have been dipped, chill them in the freezer for about 15 to 20 minutes.
  7. Remove from the freezer and place in an airtight container or holiday tin. Store them in a cool place; I usually just stick them in the fridge.
