My preferred plate of mixed greens! We're wild for this Southwestern Chopped Salad prepared in the most flavorful, smooth avocado cilantro-lime dressing! (Vegetarian, without gluten, sans oil alternative)
I'm eager to present our unequaled most loved serving of mixed greens: this Southwestern Chopped Salad! It's such a lovely, nutritious, delectable explosion of shading. I'm returning to the formula from some time back on the grounds that we make it regularly and love it, so I needed to show signs of improvement photos to impart to all of you. That and I as of late made a hand crafted velvety cilantro-lime dressing to hurl it with and WHOA child; enhance blasts with each chomp!
We think the rich, tasty cilantro-lime dressing and plate of mixed greens are an ideal marriage. So fresh and invigorating together! I love snatching a spoon and gathering up all the wonderful hues and plant-based goodness. For us, one formula of the cilantro dressing is an incredible counterpart for the measure of serving of mixed greens beneath. It's an extraordinary feast to make for picnics, potlucks, make-ahead snacks to bring. Don't hesitate to store the dressing and plate of mixed greens independently and just hurl before serving on the off chance that you'd favor it to be new and fresh!

- 1 large head romaine
- 15 oz. can black beans
- 1 orange bell pepper
- 10 oz. cherry/grape tomatoes
- 2 cups cooked sweet corn (I use organic frozen corn and thaw it)
- 5 green onions
FOR THE CREAMY CILANTRO-LIME DRESSING:
- 1 cup loosely packed cilantro (stems removed and roughly chopped)
- 1/2 avocado (or 1/2 cup plain vegan yogurt)
- 2 Tbsp. fresh lime juice (about 1/2 lime, more to taste)
- 1-2 garlic cloves
- 1/4 cup olive oil (for oil-free, sub a little water to thin)
- 1 1/2 tsp. white wine vinegar
- 1/8 tsp. salt
- Recommended: agave & cumin to taste
INSTRUCTIONS
- Make the dressing: blend all dressing ingredients in a food processor/blender until smooth. Taste and adjust seasonings if necessary. (I love the addition of a little cumin, and agave to sweeten!)
- Chop romaine, bell pepper, tomatoes, and green onions. Rinse and drain black beans.
- Place all salad ingredients in a large bowl.
- Toss with desired amount of dressing.
